This is a tasty dish with lots of fresh ingredients and guests can have fun making their own.
For cooking, you will need chicken, onions, chillies, red peppers and mushrooms.
You will also need tortillas, avocado, grated cheddar cheese and sour cream.
Prepare all cooking ingredients:
- Peel and chop the onions
- Chop and deseed the chillies
- Chop and deseed the red peppers
- Clean and chop the mushrooms
- Chop the chicken into slug size
- Fry the onions and chillies with some oil on a medium heat
- Make space in the centre and fry the chicken
- Add the red peppers and mushrooms
- In the meantime:
- Prepare the avocado squares
- Preheat the oven to 180 and warm the tortillas
- To serve, place a warm tortilla on the plate
- Add the cooked ingredients
- Add avocado squares, grated cheddar cheese and sour cream
- Wrap tortilla and enjoy!
A really tasty dish for the next day is to use any leftovers:
- Sprinkle some grated cheddar cheese on a tortilla
- Place in a preheated oven for 5 minutes
- Add avocado squares, red peppers and sour cream
- Enjoy!

This tastes pretty good if you like this thought of thing - I get a craving for it every few months.
You will need bacon (I like unsmoked - 4 slices per person), single cream (2 tablespoons per person), eggs (1 per person), parmesan cheese and spaghetti.
- Boil some water in a pan
- Slice the bacon into bite size chunks
- Fry the bacon on a medium heat
- When the water is boiling, cook the spaghetti for the required time. (Use a fork and twist to get the spaghetti into the water)
- Put the egg yolks in a bowl.
- Whisk with a fork.
- Add the single cream. Whisk.
- Add grated parmesan cheese. I add 2 heaped teaspoons per person but this will depend on your desired cheesiness.
- Add pepper as desired
- When the bacon is ready turn down the heat to low
- When the spaghetti is cooked, drain and add it to the bacon. Mix.
- Add the egg/cream/cheese mixture.
- Stir and serve quickly
- Add extra parmesan cheese
- Enjoy!
I have been asked to do more vegetarian dishes so here's one of my tasty attempts.
You will need mushrooms, red curry paste, single cream and rice. I though about adding water chestnut or bamboo shoots but decided against it at the last minute.
- Steam / boil the rice
- Wash and slice the mushrooms in half
- Heat some vegetable oil in a pan on medium heat
- Fry some red curry paste (Add more or less depending on your preferred spiciness)
- Add the mushrooms and fry them till cooked.
- Turn the heat down to low. Stir and wait for the sizzling to stop.
- Pour in some single cream and stir.
- Serve on a bed of rice. Salt to taste.
- Enjoy!
This is one of the most flavoursome dishes that will impress that special someone.
You will need chicken, mushrooms, a jar of pesto sauce, a pot of double cream and rice.
- Preheat your oven to 190 degrees celcius
- Slice your chicken (make sure to wash your hands thoroughly before and after). Slicing the chicken shortens the cooking time but also increases the surface area and so increases the flavours absorbed.
- Prepare some aluminium foil with the sides up in a baking tray
- Put the sliced chicken on the aluminium foil
- Empty the jar of pesto onto the chicken and use a spoon to ensure every piece of chicken is smothered
- Close the aluminium foil on the top
- Put this in the oven for 30 minutes
- In the meantime steam your rice and wash and cut your mushrooms into quarters
- Open the aluminium foil carefully and add the mushrooms. Stir.
- Close the foil and put this back in the oven for 15 minutes
- Open the foil and pour in a good dolloping of cream. Stir.
- Close the foil and put it back in the oven for 5 minutes
- Serve and enjoy those tasty flavours!
