This is a dish that I discovered as a student and I would cook with my best friend when we have having friends over for dinner. The ingredients in this dish are set in stone - no variations or additions please!
You will need 2 fillets of chicken, free range please - happy chickens make tasty chickens! You will also need rice, one onion, mushrooms (I like button mushrooms as they are small, cute and tasty) and some double cream.
- Peel the onion. I do this by chopping both the ends and so the brown skin is then easier to peel.
- Slice the onion in half.
- In order to dice the onion finely. Lay half an onion on flat side and slice the onion vertically - missing the top side.
- Then swivel onion and slice horizontally.
- You will have a nicely chopped onion. Watch out for your fingers please!
- Wash your mushrooms and slice into edible chunks. For button mushrooms these are perfect sliced in half.
- Slice your chicken into bite sized chunks. Please be aware of raw chicken - wash your hands before and after and use a seperate knife and chopping board.
- Your ingredients are now ready to be cooked.
- Cook the rice. I have a rice cooker and I find this makes the best rice in town - definitely worth the investment.
- Heat some olive oil in a frying pan.
- Fry the onions on a moderate heat until slightly soft.
- Make space in the middle of the pan and add the chicken.
- When the cooking side whitens turn the pieces of chicken over.
- When this side also whitens you can mix the chicken and onion pieces and keep everything cooking.
- Once the chicken seems cooked turn up the heat to give the ingredients a golden colour - keep stirring as we do not want the onions to burn.
- Add the mushrooms and keep stirring.
- When the mushrooms are cooked to your desire - I like them slightly crunchy - turn down the heat to low.
- Stir around until everything cools down.
- Add a big dollop of double cream and stir until it turns a slightly browner creamy colour.
- Your dish is ready. When the rice is cooked, enjoy!
